My son is not a picky eater ,but like most toddlers he throws his own set of tantrums when it comes to food.I try to sneak in as many veggies as I can in his meal.This recipe is one of my son’s favorites.I’m so grateful to a friend of mine for sharing this with me.It’s packed with nutrition and makes a simple,quick and healthy dinner choice.
Ingredients:
cooked Rice-1/2cup
Spinach- washed and finely chopped-1Cup
Frozen Peas- boil them in microwave for 3-4mins-1/4cup
salt- 1tsp
Sugar- 1tsp
Extra Virgin Olive Oil-1 tbsp
poppy seeds-1/2tsp-you can skip this,but it adds a nice crunchy flavor to the dish
Directions:
1.Saute spinach and boiled peas in oil ,add a pinch of salt,poppy seeds andlet it cook for 5-6mins covered
2.Once the spinach starts wilting and the whole mixture starts coming together,add sugar and remove it from heat
3.Make small bite sized portions of the curry and rice and give it to your toddler-they will absolutely love it!
